4 slices of bacon, chopped
3 boneless skinless chicken breasts or thighs
2 cans diced tomatoes with chilies (with liquid)
1 can Coors Light
Salt and pepper, to taste

Preparation
Step 1Cook chopped bacon on medium-high heat in Dutch oven or skillet with high sides, and remove from oil when crispy. Brown the chicken in remaining oil on both sides. Step 2Add in tomatoes with juices, bacon bits and Coors Light, and season to taste with salt and pepper. Cover and reduce heat to low, continue braising chicken, simmering until cooked through.Step 3Remove the chicken from sauce and shred by hand or using two forks.
