Ingredients

Olive oil, for the pan

1/2 lb. ground beef

1 tsp. taco seasoning

Kosher salt

Freshly ground black pepper

4 sesame hamburger buns

8 slices cheddar

Shredded lettuce, for serving 

Pickles, for serving

1/2 c. mayonnaise

2 tbsp. yellow mustard

1 tbsp. ketchup

1 tbsp. pickle relish

2 tsp. apple cider vinegar

1/2 tsp. garlic powder

1/3 tsp. onion powder

1/4 tsp. paprika

1/4 tsp. kosher salt

Preparation

Step 1Make tacos: In a medium skillet over medium heat, heat oil. Add ground beef and cook, breaking meat up with a wooden spoon, until no longer pink, 4 minutes. Drain fat.Step 2Return meat to skillet and add taco seasoning and season with salt and pepper. Step 3Separate hamburger buns and, using a rolling pin, roll out hamburger buns to ¼" thick. Place a slice of cheese on top of each bun and fold like a taco. Place buns in a toaster and toast until cheese is melty and buns hold their shape, 3 minutes. Step 4Make sauce: In a medium bowl, whisk together mayonnaise, yellow mustard, ketchup, pickle relish, apple cider vinegar, garlic powder, onion powder, paprika, and salt. Step 5Build tacos: Add lettuce, pickles, and taco meat to shells, then drizzle with sauce.
