Ingredients
1 box Funfetti cake mix
1 tsp. baking powder
2 large eggs
1/2 c. (1 stick) butter, softened
1 tsp. pure vanilla extract
1/2 c. rainbow sprinkles
Preparation
Step 1Preheat oven to 350° and line two baking sheets with parchment paper. Step 2In a large bowl, combine cake mix and baking powder. Add eggs, butter, and vanilla, then fold in sprinkles. Scoop out dough with a medium cookie scoop and place on a baking sheet, about 1" apart.Step 3Bake until slightly golden, 12 to 13 minutes. Let cool.
If you’d like to work in advance, simply scoop cookie dough onto a parchment paper-lined baking sheet and place in freezer. Once the dough balls are frozen solid, transfer to a resealable plastic bag. No need to let the dough thaw before baking! Just transfer to a parchment paper-lined baking sheet (again!) and bake as normal. The cookies may just require a couple additional minutes in the oven. Not into funfetti? Any flavor of cake mix will work!
