Ingredients
1 c. Greek yogurt
1/2 c. Funfetti cake mix, divided
rainbow sprinkles
1/2 loaf of sliced bread, white or wheat
1 tbsp. butter
5 eggs
1/3 c. milk
1/2 tsp. vanilla extract
1/4 tsp. cinnamon
Preparation
Step 1Make the Birthday Cake Filling: Whip Greek yogurt and 1/4 cup Funfetti cake mix. If it’s not sweet enough, stir in more cake mix, 1 teaspoon at a time, until desired sweetness. Set aside 1/4 cup cake mix for glaze to top French toast. Gently fold in more rainbow sprinkles.Step 2Make the Stuffed French Toast: Spread Greek yogurt mixture onto a slice of bread. Place another slice on top, pressing down to make a sandwich. Repeat until all stuffed French toasts have been made.Step 3Melt 1 tablespoon butter in a sauté pan over medium heat. As butter melts, grab a shallow bowl and beat eggs, milk, vanilla extract and cinnamon.Step 4Dip stuffed French toast into egg mixture, submerging both sides completely. Place dipped French toast onto the sauté pan, cooking both sides until lightly golden. Repeat with all stuffed French toasts you’ve made.Step 5Make the glaze: Add 1 tablespoon water to remaining cake mix and whisk to combine. Add water, 1 tablespoon at a time, until you’ve created a thin glaze sauce. Spoon it atop the French toast and top with additional sprinkles. Serve warm with maple syrup.
