Ingredients
1 1/2 c. all-purpose flour
1/4 c. powdered sugar
2 tsp. baking powder
1/2 tsp. kosher salt
1 1/4 c. whole milk
1 large egg yolk, plus 3 egg whites
1/4 c. rainbow sprinkles, plus more for serving
4 tbsp. unsalted butter, melted and cooled
Cooking spray
1 c. vanilla frosting
Whipped cream, for serving
Preparation
Step 1In a medium bowl, whisk flour, powdered sugar, baking powder, and salt until combined. Step 2In a large bowl, whisk milk, egg yolk, and butter until combined. Add the dry mixture and sprinkles to the wet mixture and fold until just combined. Step 3 In another large bowl, beat the egg whites on medium-high until stiff peaks form, about 1 minute. Fold the beaten whites into the batter, just until combined, being careful not to overmix. Step 4Heat a medium nonstick skillet over medium heat. Grease skillet with cooking spray. Pour about 1/2 cup pancake batter into pan. When little bubbles appear, about 2 minutes, flip and continue cooking until both sides are lightly golden, about 1 minute more. Transfer to a plate or wire rack to cool slightly. Repeat with remaining batter. Step 5Stack pancakes on two plates, layering frosting in between. Top with whipped cream and more sprinkles.
