Ingredients
5 1/2 c. heavy cream, divided
2 8-oz. packages cream cheese, softened
2 9-oz. boxes chocolate wafer cookies
2 c. semisweet chocolate, chopped
1/3 c. oreo cookies, crushed
Preparation
Step 1Make cream cheese mixture: In a stand mixer fitted with a whisk attachment, beat 3 cups heavy cream until stiff peaks form, then beat in cream cheese until fluffy. Step 2On a cake stand, arrange chocolate wafers in a circle of six, and place one wafer in the center. Use a rubber spatula to spread on cream mixture with enough cream to cover. Arrange next layer of wafer cookies on top, making sure to overlap the cookies, not placing them directly on top of the previous layer. Continue layering wafer cookies and cream cheese mixture until you run out of both, then transfer to the refrigerator overnight.Step 3When ready to serve, make ganache: In a small saucepan, warm remaining cream until simmering. Place chocolate in a heatproof bowl and pour over cream. Let sit 3 minutes, then fold chocolate into cream until completely smooth and shiny.Step 4Pour ganache over cake and top with Oreos.
