Ingredients

1 (3.4-oz.) box instant vanilla pudding mix 

1 3/4 c. whole milk

4 large eggs, beaten

1/4 c. granulated sugar 

1 tsp. pure vanilla extract

1/4 tsp. ground cinnamon

Kosher salt

4 1"-thick slices brioche or pullman bread

2 tbsp. butter, divided

1/3 c. heavy cream

3/4 c. semisweet chocolate chips 

Preparation

Step 1In a medium bowl, whisk pudding with 1 1/4 cups of milk. Let sit while you make french toast. Step 2In a shallow baking dish, whisk eggs, remaining ½ cup milk, vanilla, cinnamon, and a pinch of salt. Working with one or two pieces of bread at a time, dip a slice into egg mixture and let soak a few seconds one each side.  Step 3Heat a large nonstick skillet over medium-low heat and melt 1 tablespoon butter. Cook soaked bread slices until golden, 3 to 4 minutes per side. Remove to a wire rack to cool slightly. Repeat with remaining butter and slices. Step 4In a small saucepan over medium heat, heat heavy cream just until it bubbles. Place chocolate chips in a small heatproof bowl and pour hot heavy cream over them. Let sit 2 minutes, then whisk until smooth and no clumps remain.  Step 5Place one piece of toast on the bottom of a plate. Top with half of the pudding and close the sandwich with another slice of toast. Spoon half the chocolate sauce over top. Repeat with remaining toast, pudding, and chocolate sauce and serve.
