Ingredients

5 large eggs, beaten

1 tbsp. chopped chives, plus more for garnish

kosher salt

Freshly ground black pepper

1 tbsp. butter

1 (8-oz) tube crescent roll dough

2 c. shredded Cheddar

1/2 lb. deli sliced ham

Preparation

Step 1Preheat oven to 350°. Grease an 8-x-8" baking pan with cooking spray. In a large bowl, combine eggs with chives and season with salt and pepper.Step 2In a medium skillet over medium heat, melt butter. When the butter is foamy, add eggs and let set slightly. Reduce heat to medium-low and drag the eggs with a spatula or wooden spoon to create curds. When the eggs are almost cooked to your liking, season with salt and pepper. Remove from heat.Step 3On a lightly floured surface, unroll dough and separate the sheet into rectangles. Pinch the perforations to seal. Add a layer of shredded cheese and egg to each rectangle. Top with ham in an even layer. Starting with one short side, roll up each rectangle. Pinch edges to seal. Cut each roll into 4 slices. Place cut side up in baking pan.Step 4Bake for 25 to 30 minutes, until the rolls are golden. Garnish with chives and serve.
