Ingredients

extra-virgin olive oil

1 Garlic clove, minced

1/2 c. Chopped red onion

1/4 c. dry white wine

32 oz. low-sodium chicken broth

1 c. small macaroni

kosher salt

Freshly ground black pepper

2 c. small broccoli florets

1 1/2 c. Grated Cheddar

1/4 c. chopped parsley, plus more for garnish

Preparation

Step 1In a large pot over medium heat, warm 1 tablespoon olive oil and sauté garlic for 3 minutes. Add onions and wine; simmer for 5 minutes. Add broth, macaroni and season with 1 teaspoon salt and 1/2 teaspoon black pepper; cook according to al dente package directions. Step 2Just before serving add broccoli, Cheddar, and parsley; cook until broccoli is bright green and tender and cheese is melted, about 1 minute. Step 3Garnish with parsley and serve immediately.
