Ingredients

Cooking spray

1 lb. Brussels sprouts, trimmed, larger ones halved

1 c. all-purpose flour

3 large eggs, beaten

2 c. panko bread crumbs

Kosher salt

Freshly ground black pepper

1/2 c. freshly grated Parmesan

1 c. buffalo sauce

2 tbsp. melted butter

Ranch, for dipping

Preparation

Step 1Preheat oven to 425° and grease a large baking sheet with cooking spray. Place flour, eggs, and panko in three separate shallow bowls. Add Parmesan to panko and stir to combine. Season flour with salt and pepper. Step 2Working one at a time, roll Brussels first in flour, then egg, then panko. Dip Brussels in egg and then panko one more time. Place on prepared baking sheet. Step 3Bake until Brussels are fork tender and golden, 20 minutes. Step 4Turn oven to broil. In a small bowl, combine buffalo sauce and melted butter. Toss Brussels sprouts in buffalo sauce and return to baking sheet. Broil until sauce thickens, about 5 minutes. Step 5Serve with ranch for dipping.
