Ingredients

1 1/2 c. cream soda

3 envelopes gelatin

1/2 c. vodka

1/4 c. Butterscotch Sauce

1/2 c. gold sanding sugar, divided

1/2 c. white chocolate, melted

1/3 c. cool whip

Preparation

Step 1Into a small saucepan, add cream soda. Sprinkle gelatin on top. Let gelatin soften for about 2 minutes to blow, then heat mixture over low heat. Stir until gelatin has completely dissolved, about 2-3 minutes, and remove from heat. Stir in vodka. Set aside. Step 2Pour butterscotch sauce onto a small plate, and 1/4 cup gold sanding sugar onto a separate plate. Dip your shot glasses first in the butterscotch and then in the sanding sugar. Step 3Pour butterbeer mixture into shot glasses and place in refrigerator to set, 3-4 hours. Step 4Meanwhile, make lighting bolts. Place melted white chocolate in a piping bag and pipe 2" tall lightning bolts on a small parchment lined baking sheet. Sprinkle with remaining sanding sugar and place in the freezer to harden. Step 5When Jell-O is set, top with cool whip and a lightning bolt to serve.
