Ingredients

2 lb. baby creamer potatoes, halved, or quartered if larger

1/2 small green bell pepper, stemmed, seeded and diced

1/2 small red bell pepper, stemmed, seeded and diced 

1/2 medium yellow onion, chopped

4 chicken hot dogs, cut into thin coins

2 tbsp. extra-virgin olive oil

Kosher salt

2 c. shredded cheddar

1 green onion, chopped

Heinz Simply Ketchup, for serving

Preparation

Step 1Preheat oven to 425°. Cut four 18" square sheets of aluminum foil.Step 2In a large bowl, toss potatoes, red and green peppers, onion, and hot dogs with oil. Season with salt. Divide potato mixture among pieces of aluminum foil, then fold foil around potato mixture to seal tightly. Arrange foil packets evenly spaced on a rimmed baking sheet.Step 3Bake until potatoes are tender and hot dogs are heated through, about 30 to 35 minutes. Switch oven to broil. Step 4Carefully open foil packets, allowing steam to escape. Sprinkle each packet with cheddar cheese and broil until cheese is melted and bubbly, about 1 to 2 minutes. Step 5Top with green onion and drizzle with Heinz Simply Ketchup. Serve warm.
